This is a special Cantonese dish served as part of a multi-course banquet at weddings. The simplicity of cooking this dish is augmented by the quality of ingredients used to extract the most flavour from otherwise simple ingredients. We’ve perfected a spice seasoned soy sauce to add flavour complexity to the Rockling fillets. The ginger mellows and melts in the mouth when steamed with the fish.
